Sauvignon Semillon
Composition: Sauvignon 60, million 40
Origin: Own vineyards in General Roca, High Valley of Rio Negro, Patagonia, of more than 35 years of life.
Harvest: Sauvignon Blanc: First week of March, million: Second week of March. Carefully harvested by hand. Immediately sent to the winery, at a distance of 1 km from the vineyard, in small containers
Yield: Sauvignon Blanc 9,000 kg per hectare, million 10,000 kg per hectare.
Elaboration: The grapes arrive to the winery in perfect sanitary condition, with optimum maturation rate. It is stemmed and then the liquid phase of the solids is separated by a pressing process. The liquid obtained is transferred to vessels of 9,000 liters capacity
Where a process is carried out with the use of cold and enzymes pectolytic then begins the alcoholic fermentation in stainless steel tanks at temperatures between 15 ° and 17 ° that lasts approximately 15 days. Once the alcoholic fermentation has finished, the wines are racked to other vessels where the clarification and stabilization processes are started to be bottled.

Tasting notes: attractive greenish straw colour, in the nose the first thing that is perceived citrus with notes of rudeness contributed by the Sauvignon Blanc and in a second stage the typical tropical of Semillion.
